Summer-y Overnight Oats in a Jar

Hello! How are you doing? Over here it’s pretty good. I am almost done with my health coaching certification and have the final test coming up so I did a lot of reading and listening to lectures over the weekend. Then, I gave myself a break to stop drop and drink wine with a friend. Boom.

Yesterday I was Hungry all day. All all day. Luckily tortillas and cheese and tortillas and guacamole make the best snacks.

It was a rest day so I did a 21 day fix workout and contemplated foam rolling…

I don’t eat oatmeal that often in the summer because my body craves colder foods. But I have a ton of oatmeal so I  grabbed a few other ingredients from the store to make cold overnight oats in a jar. This mix doesn’t require cooking or protein powder – just throw all the ingredients together and let set. Done and done.

Summer-y Overnight Oats in a Jar

Ingredients: 1/2 cup oats, 1 – 6oz container greek yogurt (your favorite flavor), 1/2 cup diced fruit, splash of milk (any milk works)

I used strawberry greek yogurt and fresh strawberries because they’re in season and super sweet. If you use plain yogurt add a sweetener like honey or stevia. Frozen fruit works too but may change the color of the oats a little more.

Directions: Mix all ingredients. Pour into almost empty nut butter jar. Place in fridge to set overnight.

Give it a stir in the morning and enjoy!

This is the BEST way to clean out a PB jar!! So good.

Shop For a Good Cause

As y’all know, I’ve been a big fan of StitchFix — but I know that more traditional services like StitchFix and Rent the Runway can be challenging to those above a size 12-14.

As y’all ALSO know, I’m a huge fan of the Junior League and the work that we do.

I’m ALSO a huge fan of my friend Anne, who is one badass lady, and who will be my JL “boss” next year. Anne works for Gwynnie Bee, a subscription box for women sizes 10-32, which is 75% of the market of the adult female population.

Since it’s easiest to describe startups by describing them with other startups, it’s StitchFix meets Rent the Runway, in my eyes. You’re sent a box every month of clothes that you rent/borrow. Their pricing ranges from ~$30 for one item out at a time to ~$95 out at a time, and like most subscription services, you get a 30-day free trial. You typically get 9-12 items to try, so the cost is for the items you’re hanging on to.

As if that wasn’t enough…they’re currently running an amazing partnership with the Junior League — every League that gets 30 women to sign up by June 30 will get a $2000 grant to help fund the work we do to help the women and children of NYC.

So why should you sign up? Glad you asked.

2. Makes Anne look good at work.

3. Because the first 30 days is free to you.

4. Because you can wear cute clothes in support of a good cause.

Cadillac weekend

Well, the weekend went much differently than planned. Jerry and I had a hotel booked in Cadillac for Friday and Saturday nights, and we were really looking forward to running the 10K on Saturday. I hadn't yet registered for it, because we kept holding out hope that we could get a couple of friends to come with us and run the relay; so, we planned to just register the morning of the race.

On Thursday, I wanted to see what time the race started, and when I looked at the site, I noticed that there actually wasn't a 10K this year! There was a 5K, half-marathon, marathon, and marathon relay for teams of four people. Neither of us was prepared to run a half, so that was out of the question; and we really didn't like the idea of doing an out-and-back 5K when the 6.9-mile loop around the lake was exactly what we'd been looking forward to. I posted on my Runs for Cookies Facebook page asking if anyone would be interested in joining Jerry and I as a relay team, but that was a no-go.

Marathon Training Week 6 Shout Outs

We’ve reached the end of marathon training week 6. By ‘we’ I mean me and my cat that always ignores me unless I have salmon for dinner.

I have some shout-outs after a quick recap of my running.

Marathon Training Week 6

Sunday – 10 miles because I was bored and lonely.

Monday – 4 miles and 21 day fix 

Tuesday – 8 miles with 6 at tempo pace

Bonus note – > after I went to therapy and had a really good session.

Wednesday – 9 miles according to my running watch. I forgot to note this one.

Thursday – 21 day fix abs

Friday – 8 miles and yoga fix

Saturday – Long Run. 18.59 miles. This is the longest I’ve run in a long time!

Best Ways To Get More Fruits and Vegetables into Your Diet

Hello! Today I’m sharing some great ideas on how to eat more fruits and veggies. It’s part of my partnership with Align Probiotic. We’re working together to give you info on how to keep your tummy happy year ’round!

I love summer for all the usual reasons – warm (okay HOT) weather, BBQs, longer days, vacations, margaritas (more than usual) and because all the best fruits and vegetables are in season (see: my watermelon obsession).

If you have a hard time getting fruits and vegetables into your diet this a great time of year to squeeze in some more because so many delicious options are in season = they are more flavorful and cheaper than usual.

Here are some ways to get more fruits and veggies if that’s an area you need to work on right now…

Top Ways To Incorporate More Fruit and Vegetables into Your Diet

1. Try having some vegetables with breakfast. Having a big salad for lunch or a side of carrots with dinner is common, but eating veggies with breakfast might not be a part of your current routine.

Have some vegetables with breakfast by cooking up onions, peppers, mushrooms or your favorite with eggs.

Blending spinach or kale in your smoothie or protein shake.

Sneak in some sweet potato or butternut squash into your oatmeal.

Top your toast with smashed avocado and sliced tomatoes

Add salsa and beans to your breakfast burrito

2. Snack on veggies or fruit first.

When you need a snack ask yourself if you want an apple (or your fruit of choice). If the answer is no you might not be hungry and just ‘snacky’ or bored. If the answer is ‘yes’ go for it and have some fruit.

Keep your fridge stocked with your favorite fruits and vegetables AND keep them in an easy to grab place. You’re more likely to choose a piece of fruit if it’s in your line of sight in the middle/front of the refrigerator or on the counter.

3. Fill up your plate – but make sure half of it is vegetables. 

During lunch and dinner divide your plate in half and make sure it’s half veggies. Your plate = your choice of vegetables, but make sure you’re getting enough with this simple way to ‘eyeball’ it for each meal.

4. Find YOUR Favorite.

It’s okay to have a favorite indulgent food (like pizza) but you should also have a favorite fruit and vegetable. Don’t be someone who hates all green foods – find a veggie you like and a way you like it prepared.

If you don’t have a fave right now try a few until you discover something you really enjoy and don’t just have to tolerate.

Ideas: roasted brussel sprouts, stir-fry with tons of bell peppers, raw sugar snap peas, carrots with guacamole…
