How To Bake Tostada Shells

It’s Taco Tuesday! I mean, Tostada Tuesday!! Which is almost better because you can pile the toppings on super high and go for it.

There are so many jokes online and Instagram about how Taco Tuesday can be a problem. Yeah, it can be a problem if you are opposed to being addicted to tacos, but I don’t see anything wrong with that. And tacos can be pretty healthy! Most Mexican street tacos are on soft tortillas, not fried and stuffed with chicken or beef and onions with cilantro. They’re simple and delicious. Sounds good to me!

I made these baked tostada shells to change it up tonight. Since they’re not fried you can eat 8 of them. Or maybe not, I’m bad with numbers.

The point is, they are a healthy option since corn tortillas are usually made from just corn, water and lime. They are fairly low calorie and gluten free and super cheap too. Boom.

Baked Tostada Shell

Preheat oven to 400 degrees

Spray flat pan with non stick spray. Lightly spray tortillas with olive oil or brush with oil on both sides. Spread out in one layer on the pan.

Bake for about 4 minutes and flip. Bake for another 4 minutes or more until tortillas are golden brown and get crispy. Remove from oven and let cool. I had to let mine stay a little longer on each side to get perfectly golden and crispy.

Top with your favorite taco toppings like beans, pollo asada, turkey meat cooked with taco seasoning…

I brought home leftover pollo asada from yesterday’s BBQ at my fam’s. I shred it and added lettuce, tomatoes, hot sauce and cheese.

I think taco (or tostada) night is one of the easiest meals to make at home!

Life Lately

To be perfectly honest, y’all know I never try to hide when things aren’t so good, but it is so much easier to write about the good stuff and to WANT to write more when things are going well. And I feel very happy and lucky right now.

My 4th of July weekend was pretty perfect.

Friday: worked from home in the morning, took class at the Fhitting Room with part of our Daily Burn crew so we could take the lovely Dara’s class. Hello, I don’t know how to pose or really do anything correctly with a kettlebell. 

Sandy Hook

Saturday: my friends and I went out to Sandy Hook for the day again. 10/10, would beach again. Wait, maybe I should stop talking about it…

Sunday: I got in a nice swim in the morning (it’s become one of my favorite Sunday morning workouts — it’s so quiet and peaceful at the pool, just me and the geriatrics) before hopping on the train to go home for the day/evening. My mom made her spaghetti for the first time since her diagnosis, which is really a better sign than any medical test, if you ask me.

Monday: a Junior League buddy had a 4th of July party at her townhouse in Jersey City (um, hi, Port LIberte is GORGEOUS), and then we went out on their boat to watch the fireworks. It was pretty special.

And with one work day down this week, I only have one more to go, and then I head BACK to the beach tomorrow to go out to the Hamptons for a long weekend. These two days are super busy as I try to cram in as much as I can and plan for while I’m out (social media never stops so there’s a whooooole lot of planning for me to do if I am taking ANY time off which is why I end up hoarding vacation days. Tangent?) I finally got rid of some old, well well worn bathing suits and got a new one this weekend. Hello, weird tan lines. I went to probably 5-6 stores and this was the best I could do. I’m going to order another 1-2 from Target/Victoria’s Secret for the rest of the summer, though.

By this time tomorrow night, I’ll be happily exhausted, with a glass of wine in hand, ready to hit the beach instead of the office on Thursday morning.

Best Running Songs for Summer 2016

Hi! I’ve been listening to podcasts and books while running lately (okay for a while now). But I always have music on my phone for hard runs when I need an extra push or for tempo runs. Podcasts make the time go by super fast (but don’t help my legs go fast for speedwork.)

I’m still into the Adnan Syed case from Serial Season 1 and listen to podcasts about that. I’m also obsessed with TED Talks right now! Love it.

But when I want to zone out or in the last few miles of a run I switch to music and that helps me keep going when it’s hard. Fast, fun music help me keep going when I’m just ready to be done with my long run too. So here is a list of the best new running songs for the summer! I’ve been having a green smoothie everyday lately! It’s so hot after running I just want a cold smoothie and some fruit. A rep from BeachBody recently sent me a big pack of Shakeology and Performance Drinks to try out and I am obsessed with the protein powder. (Giveaway coming soon!)

It’s just protein powder, ice, spinach, almond milk and blender whirling!

Fourth of July BBQ Pictures and New Laptop

Hello! How was your weekend? Do anything super fun and festive for the 4th of July? I did a ton of stuff – including get a new laptop because my old one was starting to tell me “I am going to shut down any day now and you’re going to lose all your blog pictures since the beginning of time” – so I caved and got a new one. I dragged my feet for a long time because I am lazy about learning new stuff. I’m lazy about a lot of things actually – except running.

So, I need to figure out all my regular features and set up my blog stuff and photos and settings. I’m just giving you a head’s up that if something is weird today I’m working on it.

I’m also working on making a quick appointment to get my bands trimmed before I hack them off myself. Is it possible that my bangs grow 10x faster than my other hair?? I regret it every single time I cut them, but they are out of control.

I started my day with a run and a cycling group flew by – each rider had two USA flags on their helmets. I saw them on Easter with bunny ears on their helmets too. How fun!! If I were to ever learn how to ride a bike without falling a ton of times I’d join their group!

Me: I think watermelon and pineapple upside down cake <- I just realized I made that cake and didn’t take one picture of it! Blogger fail.

How to start running

I've written a couple of posts about this before, but I thought it was time for an updated post on the subject... How to Become a Runner.

In theory, becoming a runner is simple--you just run, and you're a runner! But anyone who tries it for the first time knows that it's not that easy. Running is tough! And at first, it's not enjoyable, because you get so out of breath and exhausted.

When I tried to start a running program (the popular Couch to 5K plan), I could never get through week 4. And more than anything, I hated doing run/walk intervals. I found myself dreading each run interval, which made the entire workout kind of miserable. Since I couldn't get past week 4, I finally decided to do my own plan--something that got the running portion out of the way at the beginning of the workout, and then I wouldn't have to dread the intervals.
