Hello! I am elbow deep in sweet potatoes and other Thanksgiving prep. ‘Meal prep’ doesn’t usually make me think of brown sugar covered casseroles and pumpkin pie, but it does this week!
Pro tip: Make a cupcake of whatever you’re baking so you can try it without cutting into it like the tragic, no self control animal you are. Oh, is that just me? Okay. Don’t judge.
I baked the sweet potatoes and peeled off the skins for the casserole. This is pretty much the only time of year when I cook so many things from scratch. I love it, but make the biggest mess ever. I also have pumpkin bread baking, cornbread and green bean casserole.
Sadly, when I was trying to get a glass tupperware down from the cupboard above the oven, one fell and hit the side of the stove. It chipped it pretty bad. Boo. But, I think if it would have hit the glass it would have completely cracked it so I should at least be happy about that. It all happened so fast I also smashed my finger at the same time and have no idea how. Oh well. Life must go on because tomorrow is my favorite day!
I tried to have a veggie and protein packed dinner since I knew I’d be eating the cornbread and a delicious pumpkin bread in 3 minutes.

It’s fine if you take a rest day, just stay honest and accountable! We all deserve a day off. But it’s easy to get way off track this time of year. Take a day or two to enjoy some rest and relaxation. Keep it part of the plan so you know when you’re running or working out again after the break.
