Hello! I’m bringing back Meatless Monday with this Vegetarian Recipe – Chorizo and Potato Tacos. The secret ingredient is the chorizo (which is usually super greasy and not healthy). I used soyrizo in the tacos and they come out full of flavor and so much healthier (and also a lot lower calorie).
This recipe only requires a few ingredients. (Am I the only one that can’t deal with tons of fancy foreign ingredients to make one meal?) Try it out and let me know what you think.
Vegetarian Chorizo and Potato Tacos Recipe
{vegan // gluten free // food}
Ingredients:
- 3 cups peeled and diced potatoes
- 1 package soyrizo (it’s near the regular chorizo at most stores)
- salt, pepper, garlic powder
- tortillas
- shredded lettuce and cheese
1. Wash, peel and dice potatoes into small cubes.
2. Place potatoes in a hot greased skillet. Season with S&P and garlic. Cook till soft.
3. Add soy chorizo. Mix to coat all the potatoes. Cook through. (You can use less chorizo if you don’t have as many potatoes, but they soak up the flavor really well.)
4. Place in taco shells (I used corn tortillas) and top with lettuce and cheese. And avocado, but I didn’t have any.
I’m sure Dora would approve of this Mexican Meatless meal! (I totally bought this cereal from the 99 cent store today.)
