Hello! I am a big fan of Meatless Monday and have a series of posts with Mexican Meatless Monday recipes. But today’s idea is NOT for dinner, it’s for dessert. I usually celebrate meatless Monday with the usual breakfast – eggs and toast with PB; lunch – a big salad topped with beans and rice; dinner – stir-fry with whatever veggies I have and an egg stirred in or some other randomness.
But this Monday was taken up a notch because Silk challenged me to make a game day acceptable dish for #MeatlessMondayNight – well, I figured if I was taking a dish to a football game watching party it would have to be dessert.
Because people like dessert and then in turn maybe they’d like me. I’m not above buying friends with chocolate.
I made super fudgey brownies and topped them with a dark chocolate sauce. THIS would definitely get me a friend or two! Try it and let me know if you make any new friends with these treats. If not, I’ll still be your friend since you read my blog.
Brownies – I used a box mix and subbed the required water with Silk Almond Milk. Everything else was made to package directions.
When the brownies were almost done I started on the dairy free chocolate sauce. This is made with semi-sweet chocolate chips that are dairy free. If you don’t care about that you can use milk chocolate chips.
Chocolate Sauce Recipe
- 1 cup chocolate chips
- 1/4 cup Silk almond milk
- dash: vanilla extract and salt
Combine chocolate chips and almond milk in a sauce pan. Place over medium heat and stir continuously for 10-15 minutes. Sauce will slowly thicken.
